Three weeks into their tenure at 1631 Montana Avenue in Santa Monica, and the joint was jumpin&#8217;.  People everywhere, buying, eating and enjoying.  I was craving a treat, so I grabbed a piece of SLJ&#8217;s  Brown Sugar Shortbread.  It was divine, a tiny coin of a cookie, but packed with flavor.  The problem with buying only one cookie, especially one as good as <a title=\"Sweet Lady Jane\" href=\"http:\/\/www.sweetladyjane.com\/\" target=\"_blank\">Sweet Lady Jane&#8217;s<\/a> &#8211; one is never enough.  Will I never learn?  So this afternoon I got busy in my kitchen and made my own version.  This cookie is buttery and tender, not too sweet, but definitely brown sugar, definitely molasses.  And like all shortbread, it is both a keeper and a traveler.  These cookies would be a welcome addition to any Holiday cookie tin or table.  Buon Natale!<\/p>\n<p><br class=\"spacer_\" \/><\/p>\n<p><a class=\"thickbox\" rel=\"1134\" href=\"https:\/\/adribarrcrocetti.com\/main\/wp-content\/uploads\/2010\/12\/IngredientsB.jpg\" ><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/adribarrcrocetti.com\/main\/wp-content\/uploads\/2010\/12\/IngredientsB.jpg\" alt=\"Ingredients\" title=\"Ingredients\" width=\"621\" height=\"480\" class=\"aligncenter size-full wp-image-1154\" srcset=\"https:\/\/adribarrcrocetti.com\/main\/wp-content\/uploads\/2010\/12\/IngredientsB.jpg 621w, https:\/\/adribarrcrocetti.com\/main\/wp-content\/uploads\/2010\/12\/IngredientsB-300x231.jpg 300w\" sizes=\"auto, (max-width: 621px) 100vw, 621px\" \/><\/a><\/p>\n<p><br class=\"spacer_\" \/><\/p>\n<p style=\"text-align: center;\"><span style=\"font-size: xx-large;\">Brown Sugar Shortbread<\/span><\/p>\n<p><em>makes 5 \u00bd dozen 1-inch squares<\/em><\/p>\n<p>1 cup (2 sticks) unsalted butter, softened<br \/>\n \u00bd cup dark brown sugar<br \/>\n 2 cups all-purpose flour<br \/>\n \u00bd teaspoon vanilla extract<br \/>\n \u00bd teaspoon kosher salt<\/p>\n<p><a class=\"thickbox\" rel=\"1134\" href=\"https:\/\/adribarrcrocetti.com\/main\/wp-content\/uploads\/2010\/12\/InOven.jpg\" ><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-1142\" title=\"In The Oven\" src=\"https:\/\/adribarrcrocetti.com\/main\/wp-content\/uploads\/2010\/12\/InOven-300x224.jpg\" alt=\"In The Oven\" width=\"300\" height=\"224\" srcset=\"https:\/\/adribarrcrocetti.com\/main\/wp-content\/uploads\/2010\/12\/InOven-300x224.jpg 300w, https:\/\/adribarrcrocetti.com\/main\/wp-content\/uploads\/2010\/12\/InOven.jpg 640w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p><br class=\"spacer_\" \/><\/p>\n<p>Preheat oven to 300 degrees.<\/p>\n<p><br class=\"spacer_\" \/><\/p>\n<p>Place butter in bowl of KitchenAid mixer fitted with paddle.  Beat until creamy, 3 to 4 minutes.<\/p>\n<p><br class=\"spacer_\" \/><\/p>\n<p>Add brown sugar, vanilla extract and salt and combine well.<\/p>\n<p><br class=\"spacer_\" \/><\/p>\n<p>Add flour in 3 additions.  Beat until just combined.<\/p>\n<p><br class=\"spacer_\" \/><\/p>\n<p>Turn dough out onto parchment.  Form into block, wrap and place in refrigerator 30 minutes.<\/p>\n<p><br class=\"spacer_\" \/><\/p>\n<p>Cut dough in half, and working with one piece at a time, roll out to 1\/4 inch thickness on a lightly floured board.  Cut into 1-inch squares or other shape.  Gather and reroll scraps.  Place 1 inch apart on ungreased cookie sheets and bake on center rack 18 to 20 minutes or until lightly colored. In your food processor combine 1 cup granulated sugar with 1\/4 cup molasses and you&#8217;ve got brown sugar.
